Great Ner Cheesecake Off – Winners

Recipe 
Ingredients:

Base

250g Lotus Biscoff biscuits (crushed)

75g unsalted butter (melted)


Cheesecake:

500g cream cheese

50g caster sugar

1 tsp vanilla extract

240g Biscoff spread

300ml double cream

Topping

100g Biscoff spread (melted)

4 Lotus biscuits (crushed)

1 whole Lotus biscuit



Method
1.Mix base ingredients, press ontobase of a loose bottom of cake tin and leave aside to set.

2. Whisk cream cheese, sugar and vanilla extract together.

3.  Add 3/4 of Biscoff spread and beat until smooth.

4. Pour in double cream and whisk for a few minutes.

5. Stir in rest of Biscoff spread to create swirls.

6. Pour cheese cake spread over base and smooth top and let it set in the fridge for at least 6 hours.

7. Pour melted Biscoff spread over the cake and decorate.

8. Enjoy!

2 8oz (453 grams) packs soft cheese (philly cream cheese is best)

1/2 cup sugar (I use a bit more)

1/2 teaspoon vanilla

2 eggs

a bit of lemon juice adds a nice taste

for the base I sometimes cheat and use a ready made pie base or I make a quick   biscuit base.
